    What is Kombucha?

    Kombucha is a fermented beverage, made by adding a symbiotic culture of bacteria and yeast (SCOBY) to a solution of tea, sugar and water. During the fermentation process, the cultures metabolize the sugar and tea and creates a naturally carbonated beverage. It can be a little sweet, a little tart, but is full of healthy components like B vitamins, organic acids, antioxidants, and trace amounts of alcohol.

    When kombucha is served “raw” like we do it at Ensign Beverage Company, it is full of healthy bacteria and yeast.

    I've heard kombucha is good for my health, is that true?

    Lore suggests that ancients called kombucha “elixir of life.” It’s not hard to imagine as they experienced firsthand its healthful properties. According to KombuchaBrewers.org, some consumers say they’ve experienced the following when asked how kombucha makes them feel:

    What's a SCOBY?

    A SCOBY (Symbiotic Culture of Bacteria and Yeast) is the culture used to turn tea, water and sugar into kombucha. It’s a cellulose matrix of good bacteria, yeasts, and enzymes (probiotics). These cells eat the sugar in the tea, which in turn, naturally carbonates the kombucha and makes healthy organic acids. It looks a little funky, sometimes people call it a mushroom — its actually a real Mother.

    The SCOBY is also referred to as a mother. “Why? Because, each batch, the mother will create an additional SCOBY called the baby, which can be used to propagate new batches. Many fermented food starters are called mothers.” – KombuchaBrewers.org

    The SCOBY, mushroom, or mother is all natural and the cultures are similar to what is used to make a lot of fermented foods like sourdough bread, real yogurt and kefir!

    Does kombucha contain alcohol?

    Kombucha contains trace amounts of alcohol, it’s a natural byproduct of the fermentation process that preserves the brew and protects it from harmful microorganisms. The minuscule amounts of alcohol are similar to what can be found in unpasteurized fruit juice.

    Kombucha is not considered intoxicating. The trace amounts of alcohol are not present in sufficient quantity to induce a noticeable change in mood, physical or mental abilities as when drunk on alcohol.
